摘要

Effect of different concentration and varying shear rate on viscosity of guar gum was investigated. The concentration of guar gum of cultivar RGC-986 utilized were 0.5, 1.0, 1.5, 2.0, 2.5 and 3.0 per cent w/v. Guar gum solution of various concentration were evaluated for viscosity measurement by Roto-viscometer (RV-20) using MV-II spindle shear rate of 4.51 to 451.00 Sec. at 37 ± 1°C temperature. The result obtain of viscosity were showed increased trends as concentration of guar gum solution increase. When shear rate was increased, viscosity of guar gum solutions was decreased.
