After returning from Anuga a few weeks ago, I am confident stating that beverages are the Number One delivery vehicle for functional ingredients, which are defined as food components that may provide benefits beyond basic nutrition. Of course, beverages can start with a variety of ingredients. But in efforts to appeal to the clean-label, health and wellness consumer, it appears that the most common beverage bases for functional ingredients are either something very simple such as water (usually onlyslightly sweetened with either a natural or no-calorie sweetener), juice or something much more complicated such as milk, soy or a protein complex.
