Spelt wheat [Triticum spelta] kernels can be dehulled using a pressure dehulling device. The main operating parameters such as pressure, sample size and process time have to be adjusted to achieve optimal results. The pressure has to reach a specific value, dependent on sample moisture content, to break the hulls. Excess pressures lead to a higher percentage of damaged kernels. Large sample sizes prevent full dehulling, but small samples lead to damaged kernels. Longer processing times have a negative effect on damage to the kernels and cannot compensate for too low a pressure. Using response surface methodology, the optimum parameters for different moisture contents of spelt kernels was calculated.
