The egg industry has seen interesting developments over the past twenty years. This commodity product has been unjustly blamed for being unhealthy, but in recent years increasing evidence reveals that eggs are safe to eat and can even be seen as a nutraceutical. It was in 1983 that Time Magazine published its famous cover picture, from which the egg industry in many countries is still trying to recover. The picture showed a plate with two fried eggs, sunny-side-up, in the form of eyes, and a slice of bacon curved downwards to make a very sad mouth. The accompanying text claimed that the cholesterol in eggs was responsible for increases in blood cholesterol and thus, incidence of heart disease and other ailments. Egg sales plummeted.
