Sturgeon culture is an important industry and technology. The commercial culture of various sturgeon species has been established over the last 20-30 years. The first trials in sturgeon farming were carried out almost simultaneously in the mid 19th century in Russia, Germany and North America to compensate for declines in the harvest of wild sturgeon. After a series of failures, major progress was made in the 1950s in the former USSR to support wild Caspian sturgeon populations. Sturgeon farming is performed to provide meat and caviar for human consumption, plus for recreational purposes, such as for aquarium fishes and garden ponds as well as for recreational fishing.
