Profitability of small scale freshwater prawn processing in Kentucky

Freshwater prawn production is a small scale aquaculture industry in some areas of the United States. Inasmuch as harvested animals cannot be stored whole for long periods of time, there is a major interest in prawn processing. Most prawn farmers in Kentucky, and neighboring states, are small-scale producers with no access to large-scale seafood processing facilities, such as the catfish processing plants in Mississippi, Arkansas and Alabama. Hence, the prawn industry has focused on small-scale, hand processing facilities, which are relatively easy to construct and operate.
