WATT PouItryUSA: Do you see diets in the USA continuing to shift more to poultry, or will red meat make a comeback, or will people eat more vegetable based protein? Greg Lee: Protein consumption will continue to grow in the absolute and on a per capita basis, albeit that growth will probably be at a much slower rate than in the past. It is reasonable to expect that poultry will still be the "winner" in that it will probably continue to gain market share. A number of the things that have brought aboutthe increase in market share for poultry over the last 30 years will continue to be in place. Economics will still be in poultry's favor, the U.S. consumer likes chicken, and the ethnic population will increase. For people of Asian or Hispanic descent,chicken has historically been a big part of their diets, so this bodes well for chicken.
