As I write this column in early June, the May 17th issue of Nation's Restaurant News (NRN) arrived in my office a week ago, and I read it, cover-to-cover. The special focus: "Food Under Fire". You may be saying, "ah, more bad news." But not me, my potato growing friends, because there are real opportunities we need to pay close attention to. There's always a silver lining-but first you have to understand the clouds.
