An the past several years, the potato industry has had to defend itself against several diet and health myths; and unfortunately, some of these myths have very long lives. The myth I am discussing here (and hopefully debunking) is the myth regarding white food. As you know, some diet plans say not to eat white food, claiming that white food somehow causes weight gain disproportionate to calorie counts. We have also had to deal with nutrition advice that seems to suggest more colorful vegetables provide superior nutrition than their white counterparts. (This is so unfair.)
