Celebration chicken

A specially created dish from a Soil Association Organic Food Awards judge. One of the best excuses for a celebration is the announcement of the winners of the Soil Association Organic Food Awards. I've not been able to take part in the judging this year which I regret. Past involvement has left me wiser and utterly thrilled by the extraordinary array of entries. I've learnt huge amounts from fellowjudges, each with their own areas-of expertise, and from the rare chance to sample many similar products side by side. It is amazing how varied the flavour and texture of, say, a dozen chickens from different producers in different parts of the country can be.
