Electrophoretic differences in the meat from different parts of Avian species

Sarcoplasmic protein band pattern of breast and leg muscle extracts from four avian species were studied. Differences in the protein band pattern between breast and leg muscles was observed in pigeon, Japanese quail and chicken, in white crow meat did not reveal any such difference.
