Honey in the comb is a natural product in its purest form when its transfer from bees to human is the shortest -- ie from the mouths of bees to the mouths of people without any mediator. Honey extracted in a centrifuge makes contact with not only theair but the extractor, itself, as well as with the different materials of the vessels involved in its transportation and bottling. The whole process of extraction can involve contamination at every stage of the process - even .more so with small-scale honey production, when the bulk volume of honey consists of the harvests from several beekeepers with small apiaries. Centrifuged honey crystallizes very quickly. However, the same honey will stay liquid within its natural wax cells for many years except for several honeys from plants such as canola and sunflower.
