Potato cultivars Kufri Lauvkar and Atlantic were compared for some physiological and biochemical attributes at 60, 75 and 90 days after planting in relation to tuber processing quality under north Indian climates. Stem and tuber number per plant; total and process grade yields were higher in Kufri Lauvkar, while Atlantic tubers maintained lower reducing sugars, sucrose, phenols and better chip colour at all the growth stages investigated. Sucrose synthase activity was higher in Atlantic tubers. Underutilization of sucrose in Kufri Lauvkar tubers has been suggested as the major reason for poor processing quality of its tubers.
