摘要

SESAME or tilis native of India with longest history of cultivation amongst oilseeds. Its use is deeply engrained in ancient Indian traditions. The sesame seed contains 40-55 per cent oil, 20-25 per cent protein, 15 per cent carbohydrates, 5 per centminerals along with sufficient quantity of antioxidants. It is considered rejuvenating and anti-ageing due to the presence of niacin, phytosterols, tocopherols and lignans. Antioxidants also contribute towards longer shelf life of seed and oil. Sesame oil is heart-friendly as it lowers cholesterol (LDL) and prevents thickening of the arteries. Oil also possesses curative properties, and is used in massaging and preparation of cosmetics. India accounts for 29 per cent of the area, 20 per cent productionin the world. It accounts for 40 per cent of international trade of this commodity. Decorticated sesame is in much demand in western countries for use in backery products and baby foods. Black seeded sesame is sought after in Japan for seasoning.
