In today's health conscious world, people want more and more fresh, natural and convenient foods. Quality and convenience are new mantras in food market. It is here that the concept of basic processing or light processing has emerged to meet the demand of high quality and convenience of the consumer. Basic or lightly processed operations have been defined as those procedures such as cleaning, washing, sorting, trimming, coring, peeling, slicing or chopping, sanitizing and packaging that does not affect the freshness of fruits and vegetables. The result of such operations is convenient fresh products that can be prepared and consumed straight away in less time.
