'Freezing' is a very important means of preservation in the fruit and vegetable industry. Frozen vegetables can provide variety all the years round. Frozen vegetables have excellent colour, flavour, taste and good nutritive value. The health benefitsof vegetables are well recognised, but the per capita intake of vegetables in our country is only 135 g against the recommendation of 280 g/day by Indian Council of Medical Research. Published reports link increased consumption of vegetables with reduced risk of chronic degenerative diseases like obesity, diabetes, cardio-vascular diseases and cancer.
