摘要

Chemical contaminants of food belong to many classes of compounds. To the most dangerous metallic impurities the presence in food in any amount is undesirable, are mercury, lead, cadmium and arsenic. To groups of chemical substances which can pollute food and appear in all elements of the environment, are pesticides and polychlorinated biphenyls and triphenyls. An essential health problem is the presence in food of polycyclic arenes (WWA) which can come from elements of the biosphere. These compounds can also form in food during processing. A next group of chemical contamination which are important pollutemts of food are nitrates (III), nitrites (V) and compounds of N-nitrosamine.
