Yeast, the oldest known microbe, is a non-photosynthetic, sophisticated, living, unicellular fungus that reproduces by budding or fission. It is larger than bacteria. About 700 species have been recognised but only few have been characterised. The term 'yeast' is commonly used synonymous to Saccharomyces cerevisiae, as much of research work was conducted on this species and it is the most widely used in the industry. Within S. cerevisiae, more than one thousand strains have been identified. The majority of Saccharomyces are GRAS (generally regarded as safe). They produce ethanol and carbon dioxide as metabolites by fermenting a wide range of carbohydrates and sugars like glucose, fructose, mannose, galactose, sucrose, maltose, raffinose etc.
