Retail and foodservice customers continue to ask for even more convenience, quality and flavour, according to further processors. "Convenience is really big," said a turkey industry further processor at the U.S., National Turkey Federation's annual convention in Long Beach, California. The statement was made in answer to the question, "What are the trends in poultry further processing?" as part of an informal survey of poultry further processors and suppliers to the further-processing industry.
