Bacteriophages seem to offer great potential in controlling food-borne pathogens, such as Salmonella and Campylobacter in poultry meat. Here, the author reviews their history and modern phage therapy. Will the responses of consumers and legislators allow poultry producers and processors to take advantage of the potential of this new control method?
