A previous research showed that the endosperm colour of 13 malting barley cultivars depends on the differences in similarity of hordeins. The endosperm colour is not specific for cultivars of high similarities of hordeins. A study was undertaken to investigate whether the changes in microstructure of endosperm as a result of 24 h germinating and heating increase the differences of colour amongst cultivars which are more similar in hordein electrophoregrams. The endosperm colour of 13 cultivars was measured using DIA System LUCIA G. The germinating and heating resulted in significant differences in colour of endosperm of some cultivars with highly similar hordeins. It suggests the possibility of evaluating the cultivar uniformity of malting barley batch, as well as predicting the malting quality of grains, using the evaluation of endosperm colour after one day germination and heating of grains.
