The development about 25 years ago of self-calibrating, repeatable gravimetric blenders solved a tot of problems. The volumetricunits that prevailed before then were fairly accurate, but they all relied on timers and motor speeds for control. This made it impossible for processors to determine whether or not the ingredient had indeed been delivered to the machine at the desired rate.
