India is the largest producer, largest consumer and largest exporter of spices in the world. As could be seen from Table 1, India's share in the world spices trade in 2006-07 was 47% in quantity terms and 40% in value terms. It may also be noted thatIndia's exports was only 9% of its production, as there is large domestic consumption base which accounts for 91% in the total spice production. Some of the major spices produced in India include Pepper, Cardamom (small), Cardamom (large), Chilli, Ginger, Turmeric, Coriander, Cumin, Fennel, Fenugreek, Garlic and others. The total production is in the range of 40.38 lakh tonnes (Table 2)
