Responses Re: Letter from Cucurachi et al. (2016) entitled, 'Challenges in assessing the environmental consequences of dietary changes'

In a recent editorial entitled "Challenges in assessing the environmental consequences of dietary changes," Cucurachi et al. (2016) raised several very important points regarding our analysis of changes in resource use and emissions that would accompany dietary shifts in the USA. We acknowledge and appreciate the challenges that Cucurachi et al. (2016) present in their editorial, and we believe that their insights will open new avenues for research. While our study provides a starting point for understanding the environmental implications of switching from our current US diet to the USDA recommended diet, we recognize the significance of conducting more refined follow-up analyses, and we are pleased to see researchers introducing critiques that will inform future research along these lines.
