Haccp and ISO9002 food processing industry: a computerized generic model for lobster production

摘要

This article presents a Hazard Analysis and Critical Control Points (HACCP) program applied to the lobster processing industry. Generic models for three lobster products are developed. The elements of the HACCP program are com- pared to and integrated with the elements of ISO 9002 standards. An analysis of the similarity between the programs is given.
