The last decade has seen substantial changes in the socio-economic, regulatory and technological conditions in which foodstuffs are produced and marketed. Lifestyles and habits have changed, the reference economic areas have widened, and new information technologies have burst onto the scene and are finding growing applications in the agri-food sector.
