After you create the disk image, you should see the image file and the mounted disk image on your desktop. You can then treat the disk image like any other removable media. When you finish using the files it contains, you just eject it as you would other disks. The only difference from it and any other disk image or drive is that you'll have to enter a password to mount it. Oh, and the NSA can't see the files contained within your disk image.
