Advances in recovery bioactive compounds from potato wastes: processing technologies and applications

In recent years, there has been a focus on sustainability and the utilisation of food waste materials in the International Journal of Food Science and Technology (Esteban & Ladero, 2018; Rhom & Aschemann-Witzel, 2019). Thus, research has evaluated how food technology can utilise waste materials from sweet corn (Lau, Harbourne & Oruna-Concha, 2019), fruit (Wang, Li & Liu, 2018; Theagarajan et al., 2019) and vegetables (Plazzotta, Sillani & Manzocco, 2018; Lafarga et al., 2019). However, potato waste utilisation has been neglected as a research topic. In this context, this special issue covers the current understanding on the recovery of bioactive extracts from potato wastes, including emerging processing techniques and potential applications, written by renowned leading scientists. Extraction of bioactive compounds from natural sources using environmentally friendly technologies and the valorisation of agri-food wastes such as those from potato processing is two hot topics that have gained attention in the recent years. Potato harvest has a high degree of discard, which currently has low added value being used primarily for animal feed. The losses produced by the peeling of the potatoes may vary between 15% and 40%. Another significant waste from the potato industry is the pulp remaining from starch extraction.
