Have you ever smelled a certain food and been transported back to a specific time or place? Perhaps the smell of strawberries makes you think of summer or the aroma of roast chicken takes you back to your childhood home. Recognising the powerful tie between our sense of smell and emotional attachment, food manufacturers are increasingly keen to tap into this link through what is known as 'sensory marketing' and, thanks to a new innovation in food packaging, it looks set to become easier to achieve. Neil Hansford, industrial cyrogenic and food expert at Air Products explains.
