Strategies to prevent contamination of processed foods by allergens are discussed. Aspects considered include: the major allergens of concern; labelling issues; the risk that recycled food ingredients, such as chocolate, may have been in contact with allergens; allergen-cleaning procedures; testing of foods and food contact surfaces for allergens; and the importance of HACCP programmes.
