The principles of quality and product safety management are well established - they have been drawn together under the heading of 'Food Control' by the UK-based Institute of Food Science & Technology. I will be discussing the way in which the elements of this comprehensive system fit together, to give control over all aspects of product quality and product safety. The term 'Good Manufacturing Practice' is equally well known and in the context of today's presentation, I will be using it to refer to a specific function within the overall Food Control system.
