2-Alkylcyclobutanones are formed from fats on irradiation. These radiolytic compounds are not formed by normal degradative processes and are known to have the same number of carbon atoms as the fatty acids from which they are formed (Table 1) with an alkyl group located in ring position 2. The usefulness of 2-alkylcyclobutanones as markers for irradiated foods containing fats has been well documented in recent years. The Ministry of Agriculture, Fisheries and Food (MAFF) has also published the cyclobutanone method in its Collaboratively-Tested Non-Statutory Methods for Food Analysis Series and the methodology is now being adopted by the European Committee for Standardisation (CEN) as a European Standard.
