摘要

The impact of mastication on aspects of nutrition has rarely been studied. As a preliminery to such studies, experiments were carried out to investigate the differences in mastication between individuals and the variation in amount of chewing required for different foods. A great variation was found both for differences across the study population, and for differences between foods, which may have profound implications for nutrition research.
