The word safe has become a suspect word over the last few years. Years ago, I can remember that we spoke of something being as 'safe as the Bank of England'. Now I am unsure how safe banks are, and we have even bigger problems when it comes to food safety; and the comparison no longer seems apt to describe the safety of food. My dictionary defines safe as 'free of danger or injury' or 'affording security' or 'reliable, certain'. These are all rather defensive words; words that imply protection from danger, and certainly that has been our experience in the food industry over the last few years; for over and over again, we have been pushed onto the defensive.
