Scientific Opinion on a Proposed Production Method for Smoked “skin-on” Sheep Meat

The European Food Safety Authority (EFSA) has reviewed a series of studies undertaken by the Food StandardsnAgency (FSA) in the UK aimed at exploring the potential for the safe production of burnt fleece skin-on sheep ncarcasses. The studies in question describe a hygienic production method based on gas flame singeing. The nresult of this review has been published as a Scientific Opinion.
