The increasing emphasis on convenience in the food industry is opening up new opportunities for the food processor, from the continuing popularity of ready meals and 'on-the-go' snacking to the growing trend towards prepacked fresh produce, meat and fish. Yet with these new opportunities come new challenges for the weighing and packing operation and today's food processor must make the most of production throughput and efficiencies in order to deliver quality product whilst maintaining a healthy profit. Placing product into trays can be a hugely labour intensive operation, particularly given the frequent retailer demand to produce packs of uniform weight. Hand weighing can lead to excessive product giveaway, with packers tending to overfill packs to achieve the target weight and avoid any legal penalties.
