NMR-Spectroscopy for Non-Targeted Screening and Simultaneous Quantification of Health-Relevant Compounds in Foods: The Example of Melamine

The recent melamine crisis in China and worldwide has clearly pointed out the deficiencies of current food control systems: they specifically focus on selected known compounds (e.g., the protein content). This targeted approach in combination with the unspecificity of the Kjeldahl method led to the fact that melamine has been overlooked in milk products for a considerable time, with grave consequences for the consumers.
