Research, scholarly work, and even popular writing commonly portray food as a complex system of processes and relationships and, as importantly, as a system that is seriously flawed, undermining human, animal, and environmental health. What is less widely understood, or critiqued, is that younger, older, minority, and certainly poorer members of the population are more likely to suffer from this flawed system, thereby facing far greater risks to their health and well-being than those with access to more resources. While it is certainly essential to recognize food as a system, it is equally important to recognize the unequal burdens the system generates and to work to relieve those burdens. These are precisely the twin goals of Food Justice, the fifth book in the MIT series Food, Health and the Environment.
