Peanut sprout is a kind of high quality natural food which has important effect on health-care. It contains abundant bioactive substances such as resveratrol and lower fat. Resveratrol is a natural occurring stilbene phytoalexin phenolic compound produced in response to a variety of biotic and abiotic stresses. In this study, we investigated the effects of ultrasonic (US) treatments and phenylalanine (PHE) feeding simultaneously on enhancing resveratrol during peanut germination. Based on Box-Behnken design, interactive effects of US & PHE treatment parameters were evaluated.
