The Paradox of Cocoa Powder

Here we examine some of the problems relating to the production and marketing of cocoa powders from the standpoint of Unicom International an international cocoa trading house. For the production of chocolate, cocoa butter is needed in large volume. By doing so one automatically produces cocoa solids (cocoa powder/cake) which for a long period was regarded as an excess product sold for retail purposes.
