Create editable documents from scanned text

There are many reasons why you might want to scan in printed text documents for editing, from quoting parts of an interesting newspaper article to resurrecting a corrupt word-processor file for which you luckily kept a printout. Unfortunately, it's not quite as simple as scanning and opening the file on your PC. A computer 'sees' a scanned document as an image. This image can be opened in an image-editing program and printed out again, but it can't be opened and edited as text in a word processor.
