Emulsifying agents

An emulsion is a dispersion of one liquid in another with which it is misible. An emulsion is a heterogeneous system consisting of adeast one immisible liquid intimately dispersed in another in the form of droplets, whose diameters, in general, exceed 0.1m. Such systems possess a minimum stability which may be accentuated by such additives as surface active agents, finely divided solids etc.
