Scotland's Bard, RobertrnBurns, was fond ofrnwhisky and his poemrnScotch Drink celebratesrnthe drink and mentionsrnthe use of bere (bear), anrnold type of barley, forrnmaking it:rn"Let other poets raise arnfracasrn'Bout vines an' wines, an'rndrucken Bacchus,rnAn' crabbit names an'rnstories wrack us,rnAn' grate our lug:rnI sing the juice Scotch bearrncan mak us,rnIn glass or jug."rnAmazingly, over 200 years since Burns' poem, bere is still being grown in the north of Scotland and we describe recent projects to develop specialist whiskies using this old crop - probably Britain's oldest cereal in continuous commercial cultivation.
