What is your favorite taste or flavor? Why? Chocolate. I love everything about it. Dark or milk or white; I love its texture, its aroma, its color and its flavor. It is versatile and pairs well with so many spices, nuts and liquors. Most of all I like how challenging it is to work with. Who would you most like to share a kitchen with? If I could, I would share a kitchen with Christophe Michalak, pastry chef of the prestigious three Michelin-starred Plaza Athenee in Paris. I follow his work and I like him because of his innovative, interesting and emotional approach to the classic French "haute patisserie," as well as his excellent presentation.
