采用凯氏定氮法对商洛野生蕨菜在拳缩期和展开期不同采收部位蛋白质含量测定,试验结果表明,在拳缩期商洛野生蕨菜茎、叶柄、叶片的蛋白质含量分别为8.93%、25.64%、32.20%,在展开期商洛野生蕨菜茎、叶柄、叶片的蛋白质含量分别为3.33%、13.84%、21.70%,通过比较可以得出结论,拳缩期蕨菜采收效果较好;蕨菜叶片部位的蛋白质含量最高。%This paper uses Kjeldahl nitrogen determination method to determine the protein content of the wild fern in Shangluo in the contraction and expansion periods. The test results show that in the contraction period of Shangluo wild fern, the protein content in the stem, petiole, leaf are 8.93%, 25.64%, 32.20%. In the expansion period of Shangluo wild fern, the protein content in the stem, petiole, leaf are 3.33%、13.84%、21.70%. It can be concluded by comparison, the harvesting effect of contraction period is better, and the protein content of fern leaves is the highest.
