小麦蛋白加工改性技术的研究进展

摘要

从小麦蛋白的结构研究、加工技术和改性技术3个方面概述了小麦蛋白材料的研究进展.在结构研究方面,着重介绍了小麦蛋白的化学组成、电泳技术的研究进展；加工技术方面,则分别介绍了模压法、浇铸法和挤出法等在小麦蛋白材料加工中的广泛应用；改性技术方面,详细阐述了增塑改性法、物理共混改性法和化学共混改性法等方法在该领域的应用.%The structural research including chemistry structure and gel-electrophoresis technology, processing technology covering compression-molding, casting and extruding ,and modification technology comprising of plastici-zing modification, physical mixing and chemical mixing of wheat gluten are introduced in detail.
