1964年汾酒试点科研成就

         

摘要

全面总结了1964年由轻工业部牵头在汾酒厂进行的试点研究工作,主要有四方面成就:一是分析检验方法的建立,包括化学分析法、微生物实验法和汾酒品质尝评法;二是伏曲的生产写实,制定了完整的大曲生产工艺、进行了大曲微生物鉴定、确定了大曲贮存期、并对制曲工艺创新进行研究;三是汾酒的酿造写实,对取样及测量方法进行完善、确定了用曲方法、对酿酒工艺总结及改进、改进了蒸馏设备以及增香调味酒的研究;四是汾酒质量的研究,制定汾酒质量标准、解决生产实际问题.奠定了中国白酒科研的基础.%In 1964,under the leadership of Ministry of Light Industry,pilot research on Fenjiu was carried out in Fenjiu Distillery and great achievements had been accomplished in four aspects:1)establishment of analytic testing methods including chemical analysis, microbiological experiment and Fenjiu tasting procedures;2)actual production of Daqu in summer,formulation of the complete Daqu production process, identification of Daqu microorganism, determination of the storage period of Daqu, and technical innovation of Daqu production;3)perfection of the sampling and measuring methods of Fenjiu,determination of the use method of Daqu,improve-ment of Fenjiu distillation equipment,and study of aroma-enhancing flavoring liquor;4)formulation of the quality standards of Fen-jiu and settlement of the problems in Fenjiu production. The pilot research on Fenjiu in 1964 laid the foundation for scientific re-search on Baijiu in China.
