不同月龄湖羊及其杂种乳羔肉脂肪酸含量的研究

摘要

为研究乳羔肉中脂肪酸含量,随机选取2月龄和4月龄湖羊(Hu sheep)、杜湖一代(杜泊♂×湖羊♀,DH)、萨湖一代(萨福克♂×湖羊♀,SH)羔羊各5只,屠宰后采集背最长肌和腿肌,测定其中的脂肪酸含量.结果表明:2月龄羔羊背最长肌和腿肌中饱和脂肪酸(SFA)含量均显著低于4月龄(P＜0.05),2月龄DH单不饱脂肪酸(MUFA)极显著高于4月龄(P＜0.01).2月龄湖羊背最长肌中MUFA低于4月龄(P＜0.05),但多不饱和脂肪酸(PUFA)显著高于4月龄,与DH相反,SH则无显著的变化(P＞0.05).在腿肌中,2月龄湖羊羔羊的MUFA和PUFA均显著高于4月龄(P＜0.05),DH 2月龄羔羊MUFA极显著高于4月龄羔羊(P＜0.01).与膻味有关的癸酸和硬脂酸含量也随年龄而增加,2月龄羔羊背最长肌和腿肌多不饱和脂肪酸均高于4月龄羔肉,其中人体所必需的亚油酸和亚麻酸也表现出同样的趋势.%To study the fatty acid content in lambs mutton,lambs of Hu sheep,DH (Dorper ♂ × Husheep ♀) and SH (Suffolk ♂ × Hu sheep ♀) at 2-month-old and 4-month-old were randomly select ed,5 lambs in each group.All lambs were slaughtered and the samples of longissimus dorsi and leg muscle were collected to mensurate the content of fatty acids.The results showed that the contents of saturated fatty acid (SFA) at 2-month-old were lower than that at 4-month-old in the longissimus dorsi and leg muscles (P＜0.05),and the unsaturated fatty acids (MUFA) in DH were significantly higher (P＜0.01).The MUFA of the longissimus dorsi in Hu sheep was lower and polyunsaturated fatty acids (PUFA) were higher (P＜0.05),that of DH was the contrary,while that of SH didn't change remarkably(P＞0.05).In the leg muscles,MUFA and PUFA of Hu sheep at 2-month-old were significantly higher than that at 4-month-old (P＜0.05),MUFA of DH at 2-month-old was significantly higher than that at 4-month-old (P＜0.01).It is worth noting that the contents of capric acid and stearic acid also were increased with age.The contents of polyunsaturated fatty acids in longissimus dorsi and leg muscle of all lambs of 2-month old were higher than that of same breed lambs of 4-month-old.Among polyunsaturated fatty acids,linoleic acid and linolenic acid,which were necessary for human body,were of same tendency.
