Antioxidants can prolong the shelf life of foods containing oil or fat, and maintain their nutritional quality and flavor. Antioxidants can also regulate the oxidative damage induced by free radicals of human body, which is beneficial to human health. So it is a hot research topic to search for natural antioxidants from vegetables, fruits, herbs and other plants. The mechanism of lipid oxidation and the mechanism of the oxidation resistance action of antioxidants were discussed. Based on the mechanisms, four kinds of methods used to characterize the antioxidant activity of natural plants were reviewed.%抗氧化剂能使含有油脂或脂肪的食品保质期延长,保持其营养质量和风味;对人体内因过氧自由基引起的氧化损伤有调节作用,对人类的健康有益。因此,从蔬菜、水果、草药等植物中寻找天然抗氧化剂并对其活性加以表征成为研究的热点。本文在脂质氧化机理的基础上讨论了抗氧化剂的作用机理,并以此为依据总结、概括了四类用于表征天然植物抗氧化剂活性的方法。
