This paper introduces the theory of glass state and glass transition, elaborate the important influence of glass transition on food, and apply this theory to explain the mechanism of the drying process quality change.%本文从玻璃态及玻璃化转变相关理论出发,阐述了玻璃化转变这个物理化学过程对食品干燥贮藏稳定性的重要影响,并应用该理论解释干燥过程中品质变化机理。
